Art di Daniele Sperindio: Newly minted One MICHELIN Star Restaurant in 2021 (National Gallery Singapore)

Barbabietola Cremosa
burrata campana, medley of beetroots, pinoli pomegranate

Anything but artsy fartsy.

Had the chance to check out this newly minted one-Michelin star restaurant Art as it was a special occasion. We were surprised to see that the place was fully seated on a weekday lunch. Overseeing Marina Bay, the space is located at Level 6 of National Gallery Singapore. We decided to go with the four-course Italian lunch (SGD 68++) which was curated by Executive Chef Daniele Sperindio.

We began with a very interesting amuse bouche of potato chips + peanut butter + olive tapenade on the right. The squarish white block on the left was a savoury marshmallow dusted in some spice powder which I couldn't recall exactly what it was.

Meantime, we were served some in-house made sourdough which was really delicious and helped to substantiate the rather small portion for each course. We were given olive oil that came from the hometown of the chef.

Cinque Terre
sardines, piselli, olio di baccala, braised artichoke melone bianco, margherite
Pesto di Mare
taglierini verdi, terragon pestato, smoked corvina pompelmo rosa
Filetto Tartufato
organic beef tenderloin, zucchini ripieni rosemary sabayon, bagna cauda, uncinato
Petit Four of Nougat and Cherry Mousse
We had two different mains, the pasta and the beef so that we can have a variety to try. Honestly, the mains were smaller than what I expected (not too bad if you are watching calories I guessed) I prefer the pesto to the beef, which was somehow gamey.

Finally, we reached the dessert “Gianduja” which was inspired by the chef’s favourite Nutella. It was rather disappointing to see that the hazelnut gelato had started to melt when it was served but the taste and texture were spot on. Very sweet indeed but I wished I had more. Overall a place with nice ambience and view, except for the food service which was procrastinated towards the end. The dessert and the petit four took almost an hour to be served.
